Easy Sheet Pan Prawns with Roasted Veg

1.**Make the sauce:** Cut two of the lemons into wedges and set aside for serving. Zest and juice the remaining lemon into a large mixing bowl. Add the olive oil, garlic, paprika, oregano, coriander, cumin, and pepper. Add a big dash of kosher salt and black pepper. Whisk to combine.

2.**Marinate the prawns:** Pat the prawns dry and add them to the bowl with the sauce. Toss to make sure the prawns are well-coated. Set aside while the oven is preheating.

3.**Preheat the oven:** Position a rack in the middle of your oven and heat to 400°F (200°C).

4.**Bake the prawns:** When the oven is hot, add the prawns to a large sheet pan and spread them in a single layer. Pour any leftover sauce over the top, then bake on the middle rack until the prawns turn from grey to opaque pink, about 5 to 7 minutes.

5.**Finish and serve:** Garnish with chopped parsley and serve with roasted vegetables.
