Exquisite Dorayaki with Rare Ingredients

1.In a large mixing bowl, combine the all-purpose flour, sugar, baking powder, baking soda, and salt. Mix well to ensure even distribution of dry ingredients.

2.In another bowl, whisk together the eggs, milk, and vanilla extract until well combined.

3.Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

4.Divide the batter into two separate bowls. In one bowl, add the matcha powder and mix until fully incorporated. In the other bowl, add the black sesame paste and mix until smooth.

5.Heat a non-stick skillet over medium heat. Lightly grease the skillet with oil or butter. Pour a small ladle of the matcha batter onto the skillet, forming a round pancake. Cook for about 2-3 minutes until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown. Repeat with the black sesame batter, creating a second pancake.

6.Once both pancakes are cooked, remove them from the skillet and let them cool slightly. Spread a layer of sweet red bean paste on the matcha pancake and a layer of yuzu marmalade on the black sesame pancake.

7.Carefully sandwich the two pancakes together, with the fillings in between. Press gently to secure them.

8.For an elegant touch, garnish the top of the dorayaki with edible gold leaf before serving.
