Savory Turkey and Veggie Christmas Spring Rolls

1.In a large skillet over medium heat, add the ground turkey and cook until browned, breaking it apart with a spatula, about 5-7 minutes.

2.Add the minced garlic and grated ginger to the skillet, cooking for an additional 1-2 minutes until fragrant.

3.Stir in the shredded carrots, sliced bell peppers, chopped green onions, and bean sprouts. Cook for another 3-4 minutes until the vegetables are tender but still crisp.

4.Pour in the soy sauce and sesame oil, mixing well to combine all the ingredients. Remove from heat and let the mixture cool slightly.

5.Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it becomes pliable. Lay it flat on a clean surface.

6.Place a small amount of the turkey and veggie mixture in the center of the wrapper, leaving space on the sides. Fold the sides over the filling, then roll it up tightly from the bottom to the top, sealing the edges as you go. Repeat with the remaining wrappers and filling.

7.Heat a non-stick skillet over medium heat and add a little oil. Once hot, place the spring rolls seam-side down in the skillet and cook for 2-3 minutes on each side until golden brown and crispy.

8.Remove the spring rolls from the skillet and place them on a paper towel to drain any excess oil.

9.Serve the spring rolls warm, garnished with fresh cilantro leaves, alongside lettuce leaves and sweet chili sauce for dipping.
