Tropical Christmas Delight Cake

1.Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

2.In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

3.Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract and coconut milk until fully combined.

4.In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, ground ginger, and salt.

5.Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.

6.Fold in the shredded coconut, mixed dried fruits, and chopped nuts (if using) until evenly distributed throughout the batter.

7.Pour the batter into the prepared cake pan and smooth the top with a spatula.

8.Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

9.Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

10.Once cooled, you can frost the cake with a light coconut cream frosting or serve it plain, garnished with additional shredded coconut and dried fruits.
