Spinach and Mahi Mahi Bake with Creamy Lemon Sauce

1.Preheat your oven to 375°F (190°C).

2.Rinse the mahi mahi fillets under cold water and pat them dry with paper towels. Season both sides with salt, black pepper, and garlic powder.

3.In a large oven-safe skillet, heat olive oil over medium heat. Add the mahi mahi fillets and sear for about 2-3 minutes on each side until they are golden brown. Remove the fillets from the skillet and set aside.

4.In the same skillet, add the fresh spinach leaves and sauté for 2-3 minutes until wilted.

5.Pour the heavy cream into the skillet with the spinach, stirring to combine. Add the lemon juice and zest, and bring the mixture to a gentle simmer.

6.Return the mahi mahi fillets to the skillet, nestling them into the creamy spinach sauce. Sprinkle the capers evenly over the top.

7.Sprinkle the grated Parmesan cheese over the mahi mahi and sauce.

8.Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the fish is cooked through and the sauce is bubbly and slightly thickened.
