Classic Christmas Clootie Dumpling

1.Prepare the steaming setup by filling a large pot with water and bringing it to a gentle simmer. Ensure you have a steaming rack or an upturned plate to keep the dumpling above the water level.

2.In a large mixing bowl, combine the self-raising flour, breadcrumbs, brown sugar, baking powder, ground cinnamon, ground nutmeg, ground ginger, and salt. Mix well to evenly distribute the dry ingredients.

3.Add the mixed dried fruit, chopped dates, and chopped dried apricots to the dry mixture, stirring until the fruit is well coated with the flour mixture.

4.In a separate bowl, whisk together the egg, milk, treacle, and melted butter until smooth. Add the lemon and orange zest, mixing until combined.

5.Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; the batter should be thick and slightly lumpy.

6.Lay out the piece of muslin or cheesecloth on a clean surface. Spoon the dumpling mixture onto the center of the cloth, gathering the edges to form a pouch. Tie securely with kitchen twine, leaving some space for the dumpling to expand during cooking.

7.Carefully place the dumpling into the simmering pot, ensuring it is above the water level. Cover the pot with a lid and steam for 2 to 2.5 hours, checking occasionally to ensure there is enough water in the pot. The dumpling is ready when it feels firm to the touch and a skewer inserted comes out clean.

8.Once cooked, carefully remove the dumpling from the pot and let it cool for a few minutes before unwrapping. Serve warm, sliced into wedges.
