Lemon Mascarpone Mousse with Honey-Lavender

1.In a medium mixing bowl, combine the mascarpone cheese, powdered sugar, lemon zest, lemon juice, vanilla extract, and a pinch of salt. Whisk together until smooth and creamy, ensuring there are no lumps.

2.In a separate large bowl, whip the heavy cream using an electric mixer on medium-high speed until soft peaks form, about 2-3 minutes.

3.Gently fold the whipped cream into the mascarpone mixture in three additions, being careful not to deflate the whipped cream. The mixture should be light and airy.

4.Once combined, spoon the mousse into individual serving glasses or bowls, filling them about three-quarters full. Refrigerate for at least 15 minutes to set.

5.While the mousse is chilling, prepare the honey-lavender drizzle. In a small saucepan over low heat, combine the honey and dried lavender. Stir gently until the honey is warmed and fragrant, about 2-3 minutes. Remove from heat and let it steep for 10 minutes, then strain to remove the lavender flowers.

6.To serve, drizzle the honey-lavender syrup over the chilled mousse and garnish with fresh lavender sprigs if desired.
