Classic Vanilla Pudding

1.In a medium saucepan, combine the sugar, cornstarch, and salt.

2.Gradually whisk in the water and milk until the mixture is smooth and free of lumps.

3.Place the saucepan over medium heat and cook, stirring constantly with a whisk, until the mixture thickens and comes to a gentle boil. This should take about 5-7 minutes.

4.Once boiling, continue to cook and stir for an additional 1-2 minutes until the pudding is thick and glossy.

5.Remove the saucepan from heat and immediately stir in the vanilla extract and butter until fully incorporated and smooth.

6.Pour the pudding into individual serving dishes or a large bowl.

7.Cover the surface directly with plastic wrap to prevent a skin from forming.

8.Refrigerate for at least 2 hours or until fully chilled and set.

9.Before serving, give the pudding a gentle stir and optionally garnish with fresh berries or a sprinkle of cinnamon.
