Garlic Parmesan Pasta with Cheese Sauce

1.Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

2.In a large skillet over medium heat, melt the butter. Add the finely chopped onion and sauté for 3-4 minutes until translucent and soft.

3.Add the minced garlic to the skillet and cook for 1-2 minutes until fragrant, stirring frequently to avoid burning.

4.Reduce heat to low and add the cubed Velveeta cheese, shredded cheddar cheese (reserve 1/4 cup for topping), grated Parmesan cheese, and milk to the skillet. Stir continuously until all cheeses melt and the sauce is smooth and creamy.

5.Season the cheese sauce with salt and freshly ground black pepper to taste. If the sauce is too thick, gradually add the reserved pasta water to reach desired consistency.

6.Add the cooked pasta to the cheese sauce and toss thoroughly to coat each piece evenly.

7.Preheat your oven broiler on high. Transfer the pasta and cheese sauce mixture to an oven-safe baking dish. Sprinkle the reserved 1/4 cup shredded cheddar cheese evenly over the top.

8.Place the baking dish under the broiler for 2-3 minutes, watching closely, until the cheddar cheese topping is melted and golden brown with a crispy finish.

9.Remove from the oven and let it rest for 2 minutes. Garnish with chopped fresh parsley if desired before serving.
