Classic Sicilian Wedding Caponata

1.Place the cubed eggplant in a colander, sprinkle generously with salt, and let it sit for 20 minutes to draw out bitterness. Rinse thoroughly and pat dry with paper towels.

2.Heat 1/4 cup olive oil in a large skillet over medium heat. Fry the eggplant cubes in batches until golden and tender, about 5-7 minutes per batch. Remove with a slotted spoon and drain on paper towels.

3.In the same skillet, add a little more olive oil if needed and sauté the chopped onion and diced celery over medium heat until softened and translucent, about 5 minutes.

4.Add the chopped tomatoes to the skillet and cook for another 5 minutes until they break down and form a sauce.

5.Stir in the green olives, capers, toasted pine nuts, and drained golden raisins.

6.In a small bowl, mix the red wine vinegar and sugar until the sugar dissolves. Pour this mixture into the skillet and cook for an additional 5 minutes, stirring frequently, until the caponata has a balanced sweet and tangy flavor and the sauce thickens slightly.

7.Return the fried eggplant to the skillet and gently fold it into the sauce. Cook together for 2-3 minutes to meld the flavors. Season with salt and freshly ground black pepper to taste.

8.Transfer the caponata to a serving bowl and let it cool to room temperature. Garnish with fresh basil leaves before serving.
