Creamy Cajun Chicken Pasta

1.Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

2.While pasta cooks, heat olive oil in a large skillet over medium-high heat.

3.Season the chicken pieces evenly with Cajun seasoning.

4.Add the chicken to the skillet and cook for 5-7 minutes, stirring occasionally, until cooked through and golden brown. Remove chicken from skillet and set aside.

5.In the same skillet, reduce heat to medium and add the chopped onion. Sauté for 3-4 minutes until translucent.

6.Add minced garlic and cook for 30 seconds until fragrant.

7.Pour in the heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.

8.Add grated Parmesan cheese and stir until the sauce is smooth and slightly thickened, about 3-4 minutes.

9.Return the cooked chicken to the skillet and toss to coat in the sauce. If the sauce is too thick, add reserved pasta water a little at a time to reach desired consistency.

10.Add the cooked pasta to the skillet and toss everything together until well combined and heated through.

11.Season with salt and freshly ground black pepper to taste.

12.Serve immediately, garnished with chopped fresh parsley.
