Authentic Steamed Chicken Momo with Spicy Tomato Chutney

1.Prepare the Dough: In a large bowl, whisk together the flour and salt. Gradually add the warm water, mixing until a shaggy dough forms. Knead on a lightly floured surface for 8-10 minutes until smooth and elastic. Cover the dough with a damp cloth and let it rest at room temperature for at least 30 minutes.

2.Prepare the Filling: In a separate bowl, combine the ground chicken, chopped onion, cilantro, ginger, garlic, cumin, coriander, turmeric, garam masala, cayenne pepper, soy sauce, and vegetable oil. Season generously with salt and pepper. Mix thoroughly by hand until all ingredients are evenly distributed and the mixture becomes slightly sticky.

3.Prepare the Chutney: Drain the soaked red chilies. In a small saucepan, briefly sauté the tomatoes, soaked chilies, garlic, ginger, and Sichuan peppercorns (if using) in sesame oil over medium heat until the tomatoes soften slightly (about 5 minutes). Transfer the mixture to a blender, add sugar, salt, and 2 tablespoons of water. Blend until a slightly coarse, vibrant sauce forms. Set aside.

4.Shape the Momos: Divide the rested dough into small, equal-sized balls (about 1 inch in diameter). Roll each ball into a thin circle (about 3 inches in diameter). Place about 1 teaspoon of the chicken filling in the center of each wrapper.

5.Fold the Momos: Bring the edges of the dough up around the filling, pinching and pleating them together to form a tight pouch or traditional crescent shape, ensuring the filling is completely sealed inside.

6.Steam the Momos: Line a steamer basket or plate with parchment paper or lightly grease it to prevent sticking. Arrange the momos in the steamer basket, ensuring there is space between each one.

7.Cook the Momos: Steam the momos over rapidly boiling water for 12 to 15 minutes, or until the wrappers are translucent and the chicken filling is cooked through. Do not lift the lid during the first 10 minutes.

8.Serve immediately while hot, accompanied by the freshly prepared Spicy Tomato Chutney.
