3.Drizzle the soy sauce and mirin (if using) over the eggs and rice.

4.Add a pinch of black pepper, if desired.

5.Using chopsticks or a fork, vigorously whisk the egg, soy sauce, and rice together until the mixture becomes creamy, smooth, and uniformly pale yellow. Continue mixing until the rice grains are evenly coated and the texture resembles a thick, savory custard.
