Classic Lamb Boti Kebab

1.In a large mixing bowl, combine the yogurt, ginger-garlic paste, chili powder, garam masala, turmeric, cumin, coriander, lemon juice, mustard oil, and salt to create a smooth marinade.

2.Add the lamb cubes to the bowl and toss thoroughly to ensure every piece is evenly coated. Cover and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to penetrate the meat.

3.Preheat your grill or oven broiler to high heat (approximately 220°C).

4.Thread the marinated lamb cubes onto metal skewers, leaving a small space between each piece for even cooking.

5.Place the skewers on the grill or a rack over a baking tray. Cook for 10 to 12 minutes, turning occasionally and brushing with melted butter or ghee, until the lamb is charred on the outside and tender on the inside.

6.Remove from the heat and let the meat rest for 3 minutes before serving.

7.Garnish with fresh cilantro and serve hot with onion rings and lemon wedges.
