Syrniki

Prepare the Batter In a large bowl, combine the cottage cheese, eggs, sugar, and vanilla extract. Mix well until smooth and creamy.

Add the Dry Ingredients Add the flour, baking powder, and salt to the cottage cheese mixture. Stir until all the ingredients are fully incorporated.

Heat the Skillet Heat a non-stick skillet or griddle over medium heat. Grease the surface with butter or cooking spray.

Cook the Syrniki Scoop about 1/4 cup of the batter onto the hot skillet for each syrniki. Use the back of the spoon to shape the batter into small pancakes.

Flip and Cook Cook the syrniki for 2-3 minutes on each side until golden brown.

Serve and Enjoy Serve the syrniki hot with a dollop of sour cream and your choice of jam or honey. Top with fresh berries for extra flavor and garnish.
