Make the noodles In a large bowl, combine the flour, eggs, water, and salt. Mix until a dough forms.

2.Knead the dough for a few minutes, then cover and let it rest for 30 minutes.

3.Divide the dough into small portions and roll out each portion into thin sheets.

4.Cut the sheets into thin noodles. Set aside.

Prepare the sauce In a large pot, heat some vegetable oil over medium heat. Add the onions and cook until softened and lightly browned.

6.Add the lamb or beef cubes to the pot and cook until browned on all sides.

7.Add the carrots, red bell peppers, and garlic. Cook for a few minutes until the vegetables are slightly softened.

8.Stir in the tomatoes, tomato paste, paprika, cumin powder, coriander powder, and chili flakes. Cook for another 2-3 minutes.

9.Pour in the beef or vegetable broth and season with salt and pepper. Bring to a boil, then reduce the heat and let simmer for about 1 hour, or until the meat is tender.

10.Meanwhile, bring a large pot of salted water to a boil. Cook the noodles until al dente, then drain.

11.To serve, divide the noodles into bowls and ladle the sauce over them. Garnish with fresh cilantro and serve with lemon wedges.
