Herb Crusted Rack of Lamb

Preheat Oven Preheat the oven to 425°F (220°C).

Prepare Herb Crust In a small bowl, mix together the Dijon mustard, rosemary, thyme, garlic, breadcrumbs, salt, and pepper.

Coat the Lamb Rub the racks of lamb with the olive oil, then coat them with the herb crust mixture, pressing it firmly onto the surface of the meat.

Roast the Lamb Place the racks of lamb on a baking sheet and roast in the preheated oven for 25-30 minutes for medium-rare, or until the internal temperature reaches 130°F (55°C).

Make Mint Sauce While the lamb is roasting, prepare the mint sauce. In a blender or food processor, combine the mint leaves, white wine vinegar, olive oil, honey, salt, and pepper. Blend until smooth.

Rest and Slice Remove the lamb from the oven and let it rest for 5-10 minutes before slicing.

Serve Serve the sliced rack of lamb with the mint sauce on the side.
