Marinade In a large bowl, combine the beef, yogurt, paprika, cumin, turmeric, coriander, black pepper, and salt. Mix well to coat the beef evenly. Cover and refrigerate for at least 1 hour or overnight.

Sauté Onion In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.

Add Vegetables Add the minced garlic, sliced red bell pepper, and sliced carrot to the pot. Sauté for a few minutes until the vegetables begin to soften.

Cook Beef Add the marinated beef (discard excess marinade) to the pot and cook until browned on all sides.

Simmer Stew Stir in the diced potato, beef broth, tomato sauce, bay leaf, thyme, oregano, and smoked paprika. Season with salt and pepper to taste. Cover and simmer over low heat for 1 hour, or until the beef is tender and the flavors have melded together.

Serve Serve the beef stew hot, garnished with a dollop of sour cream and a sprinkle of fresh dill. Enjoy!
