Pommes de Terre Potimarron Stew

Preparation 1. Heat olive oil in a large pot over medium heat. 2. Add the lamb cubes and cook until browned on all sides. Remove and set aside. 3. In the same pot, add the onions, garlic, leeks, and carrots. Cook until softened. 4. Return the lamb to the pot and add the potatoes, potimarron, bay leaf, and thyme. 5. Pour in the broth, season with salt and pepper, and bring to a boil. 6. Reduce the heat, cover, and simmer for 40-45 minutes or until the lamb is tender and the vegetables are cooked through.
