Acras de Poisson - Caribbean Fish Fritters

Start by preparing the fish

1.1. In a food processor, pulse the fish fillets until finely chopped. 2. Transfer the chopped fish to a bowl and add the chopped onion, garlic, bell pepper, and scotch bonnet pepper.

Prepare the batter

1.1. In a separate bowl, combine the flour, baking powder, thyme, paprika, cayenne pepper, salt, and pepper. 2. Gradually add water to the dry ingredients, stirring until you have a thick batter. 3. Add the fish and vegetable mixture to the batter and mix until well combined.

Fry the fritters

1.1. Heat oil in a deep skillet or fryer to 350°F (180°C). 2. Using a spoon, drop spoonfuls of the batter into the hot oil. 3. Fry the fritters in batches until golden brown and cooked through, about 3-4 minutes per side. 4. Remove the fritters and drain on paper towels. 5. Serve the acras de poisson hot with a side of spicy dipping sauce or a squeeze of lime.
