Fourth of July Pie Bites

1.Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

2.In a mixing bowl, combine the blueberries, diced strawberries, granulated sugar, cornstarch, and lemon juice. Mix well to coat the fruits evenly.

3.Roll out the pie crusts and use a cookie cutter to cut out small circles.

4.Divide the fruit mixture evenly among half of the pie crust circles.

5.Place the remaining pie crust circles on top of the fruit-filled circles to create mini pies. Use a fork to crimp the edges and seal the pies.
