Fourth of July Pie Bites

1Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

2In a mixing bowl, combine the blueberries (1 cup), diced strawberries (1 cup), granulated sugar (½ cup), cornstarch (1 tablespoon), and lemon juice (1 tablespoon). Mix well to coat the fruits evenly.

3Roll out the pie crusts and use a cookie cutter to cut out small circles.

4Divide the fruit mixture evenly among half of the pie crust circles.

5Place the remaining pie crust circles on top of the fruit-filled circles to create mini pies. Use a fork to crimp the edges and seal the pies.

6In a small bowl, mix the beaten egg (1) with water (1 tablespoon) to create an egg (1) wash.

7Divide the egg (1) wash into two portions. Add red food coloring to one portion and blue food coloring to the other.

8Brush the colored egg (1) wash over the mini pies to create a patriotic design.

9Bake the pie bites in the preheated oven for 15-20 minutes or until golden brown and the filling is bubbly.

10Let the pie bites cool slightly before serving. Top with whipped cream and sprinkles if desired.
