Indonesian Chicken Kecap Manis Skewers

1.In a large mixing bowl, combine minced chicken, kecap manis, minced garlic, minced shallot, grated ginger, vegetable oil, ground coriander, white pepper, salt, lime juice, and brown sugar.

2.Mix thoroughly with your hands or a spoon until all ingredients are evenly incorporated and the mixture becomes slightly sticky.

3.Divide the mixture into 12 equal portions and shape each portion around a soaked bamboo skewer to form elongated, evenly thick kebabs about 10 cm long.

4.Preheat a grill or grill pan over medium-high heat and lightly oil the grates to prevent sticking.

5.Place the chicken skewers on the grill and cook for about 6-7 minutes on each side, turning carefully, until the chicken is cooked through and has a nice smoky char.

6.During the last 2 minutes of grilling, brush additional kecap manis over the skewers to create a glossy, flavorful glaze.

7.Remove the skewers from the grill and let them rest for 2 minutes before serving.

8.Serve the skewers hot, accompanied by fresh cucumber slices and steamed jasmine rice for a complete Indonesian-inspired meal.
