Festive Spiced Chocolate Trifle

1.Prepare the base: In a small bowl, combine the brewed coffee and orange liqueur (or orange juice). Lightly soak the chocolate sponge cake or brownie cubes in this mixture, ensuring they absorb the liquid but do not become soggy. Set aside.

2.Make the spiced chocolate cream: Place the chopped dark chocolate in a heatproof bowl. In a small saucepan, gently heat 300ml double cream with ground cinnamon, nutmeg, and cloves until just simmering. Remove from heat and pour over the chocolate. Let sit for 2 minutes, then stir until smooth and glossy. Stir in honey or golden syrup. Allow to cool to room temperature, then refrigerate until slightly thickened, about 15 minutes.

3.Prepare the custard layer: In a bowl, gently fold the orange zest into the ready-made vanilla custard until evenly distributed. Cover and refrigerate until needed.

4.Make the whipped topping: Using an electric mixer, whip the chilled 300ml double cream with icing sugar and vanilla extract until soft peaks form. Keep refrigerated.

5.Assemble the trifle in a large clear glass bowl or individual glasses: Start with a layer of soaked chocolate sponge cubes to cover the base. Spoon over half of the spiced chocolate cream, spreading evenly. Add a layer of the orange-zested custard. Repeat the layers with the remaining sponge cubes and spiced chocolate cream, finishing with a generous layer of custard.

6.Top the trifle with the whipped cream, smoothing the surface with a spatula or piping decoratively.

7.Decorate the top with pomegranate seeds, crushed pistachios, chocolate curls, and a light dusting of edible gold dust for a festive touch.

8.Cover the trifle with plastic wrap and refrigerate for at least 2 hours, preferably overnight, to allow flavors to meld and layers to set.

9.Before serving, give the trifle a final decorative touch if desired. Serve chilled and enjoy the rich, spiced, and citrusy layers.
