Dark Chocolate and Passion Fruit Mousse Cake

Preparing the Cake Base Preheat your oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.

Step 1 In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt. Set aside.

Step 2 In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

Step 3 Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined. Stir in the hot water to thin the batter.

Step 4 Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool completely.

Preparing the Dark Chocolate Mousse Once the cake has cooled, prepare the dark chocolate mousse. Melt the chopped dark chocolate using a double boiler or in short bursts in the microwave. Set aside to cool slightly.

Step 5 In a large mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Gently fold in the melted dark chocolate until well combined.

Assembling the Cake Spread a layer of the dark chocolate mousse evenly over the cooled cake base. Smooth the top with a spatula. Place the cake in the refrigerator to set while preparing the passion fruit mousse.

Preparing the Passion Fruit Mousse In a small saucepan, heat the passion fruit puree, granulated sugar, and lemon juice over medium heat until the sugar has dissolved. Remove from heat.

Step 6 In a separate bowl, soak the gelatin sheets in cold water for 5 minutes to soften. Squeeze out any excess water and add the gelatin sheets to the warm passion fruit mixture. Stir until the gelatin has dissolved.

Step 7 In a large mixing bowl, whip the heavy cream until soft peaks form. Gradually pour in the passion fruit mixture while continuing to whip until stiff peaks form.

Step 8 Remove the cake from the refrigerator and carefully spread a layer of the passion fruit mousse on top of the set dark chocolate mousse. Smooth the top with a spatula. Return the cake to the refrigerator and let it chill for at least 4 hours, or overnight.

Step 9 Once the cake is fully chilled and set, carefully remove it from the cake pan. Serve chilled and enjoy!
