Christmas Rosette Cookies

1In a mixing bowl, combine the flour, granulated sugar (2 tablespoons), and salt (¼ teaspoon).

2In a separate bowl, whisk together the eggs (3 large), milk, and vanilla extract (1 teaspoon) until well combined.

3Gradually add the wet ingredients to the dry ingredients, whisking until smooth and no lumps remain.

4Heat oil in a deep fryer or heavy-bottomed pot to 375°F (190°C).

5Dip the rosette iron into the hot oil for a few seconds to heat it up.

6Dip the hot iron into the batter, making sure not to cover the top of the iron.

7Immediately dip the iron into the hot oil and fry until the edges of the cookie are golden brown, about 30 seconds.

8Carefully remove the cookie from the iron using a fork and place it on a paper towel-lined plate to drain excess oil.

9Repeat the process with the remaining batter, reheating the iron in the oil as needed.

10Once the cookies have cooled slightly, dust them generously with powdered sugar before serving.
