Vegan Chewy Cookies with Crunchy Outside

3In a separate bowl, cream the vegan butter substitute (½ cup), brown sugar (½ cup), and granulated sugar (¼ cup) until light and fluffy.

4Add the vanilla extract (1 tsp) and unsweetened applesauce (¼ cup) to the wet ingredients and mix well.

5Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.

6Fold in the dairy-free chocolate chips (1 cup).

7Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving space between each cookie.

8Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the center is set but still soft.

9Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
