Sweet Tapioca and Potato Pudding

1In a large pot, bring 4 cups of water (4 cups) to a boil.

2Add the diced potatoes (2 large) to the boiling water (4 cups) and cook until tender, about 10-15 minutes. Drain and set aside.

3In the same pot, add the tapioca pearls (1 cup) to the boiling water (4 cups) and cook according to package instructions, usually about 15-20 minutes, until they become translucent. Stir occasionally to prevent sticking.

4Once the tapioca is cooked, add the cooked potatoes (2 large) back into the pot with the tapioca.

5Stir in the granulated sugar (1 cup), vanilla extract (1 teaspoon), and salt (½ teaspoon). Mix well until the sugar is dissolved and everything is combined.

6If using, pour in the coconut milk (1 cup) and stir until well incorporated. Cook for an additional 5 minutes on low heat, allowing the flavors to meld together.

7Remove from heat and let it cool slightly before serving. You can serve it warm or chilled, as per your preference.
