Sweet Tapioca and Potato Pudding

1.In a large pot, bring 4 cups of water to a boil.

2.Add the diced potatoes to the boiling water and cook until tender, about 10-15 minutes. Drain and set aside.

3.In the same pot, add the tapioca pearls to the boiling water and cook according to package instructions, usually about 15-20 minutes, until they become translucent. Stir occasionally to prevent sticking.

4.Once the tapioca is cooked, add the cooked potatoes back into the pot with the tapioca.

5.Stir in the granulated sugar, vanilla extract, and salt. Mix well until the sugar is dissolved and everything is combined.

6.If using, pour in the coconut milk and stir until well incorporated. Cook for an additional 5 minutes on low heat, allowing the flavors to meld together.

7.Remove from heat and let it cool slightly before serving. You can serve it warm or chilled, as per your preference.
