Fried Orbs of Delight

1In a mixing bowl, combine the flour, cornmeal (½ cup), baking powder (1 teaspoon), salt (½ teaspoon), black pepper (¼ teaspoon), and paprika (½ teaspoon). Mix well to combine all the dry ingredients.

2In another bowl, whisk together the buttermilk (½ cup) and egg (1 large) until well blended.

3Add the buttermilk (½ cup) mixture to the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.

4Fold in the shredded cheese (1 cup), mashed potatoes, and chopped green onions until evenly distributed throughout the batter.

5Heat vegetable oil in a deep frying pan over medium heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles and rises to the surface, it's ready.

6Using a spoon or small ice cream scoop, drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pan. Fry the orbs for about 3-4 minutes on each side or until they are golden brown and crispy.

7Once cooked, remove the fried orbs from the oil and place them on a paper towel-lined plate to drain excess oil.

8Serve the Fried Orbs hot, with your favorite dipping sauce or enjoy them plain.
