Spicy Tomato Masala Delight

1Heat the vegetable oil (2 tablespoons) in a large pan over medium heat.

2Add the cumin seeds (1 teaspoon) and mustard seeds (1 teaspoon), and let them splutter for a few seconds.

3Add the finely chopped onions and sauté until they turn golden brown.

4Stir in the ginger-garlic paste (1 tablespoon) and green chilies (2), cooking for another 2 minutes until fragrant.

5Add the chopped tomatoes to the pan and mix well, cooking for about 5-7 minutes until they soften.

6Sprinkle in the turmeric powder (1 teaspoon), red chili powder (1 tablespoon), and salt, stirring to combine all the spices with the tomatoes.

7Cook for another 5 minutes, allowing the mixture to thicken. If it gets too dry, add a little water to maintain a saucy consistency.

8Once the tomatoes are well cooked and the oil starts to separate, add the garam masala (1 tablespoon) and mix well.

9Cook for an additional 2 minutes, then remove from heat.

10Garnish with fresh coriander leaves (2 tablespoons) before serving.
