Spicy Tomato Masala Delight

1.Heat the vegetable oil in a large pan over medium heat.

2.Add the cumin seeds and mustard seeds, and let them splutter for a few seconds.

3.Add the finely chopped onions and sauté until they turn golden brown.

4.Stir in the ginger-garlic paste and green chilies, cooking for another 2 minutes until fragrant.

5.Add the chopped tomatoes to the pan and mix well, cooking for about 5-7 minutes until they soften.

6.Sprinkle in the turmeric powder, red chili powder, and salt, stirring to combine all the spices with the tomatoes.

7.Cook for another 5 minutes, allowing the mixture to thicken. If it gets too dry, add a little water to maintain a saucy consistency.

8.Once the tomatoes are well cooked and the oil starts to separate, add the garam masala and mix well.

9.Cook for an additional 2 minutes, then remove from heat.

10.Garnish with fresh coriander leaves before serving.
