Savory Chorizo and Bacon Pasta with Mushrooms

1.Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

2.In a large skillet over medium heat, add the diced chorizo and chopped bacon. Cook until the bacon is crispy and the chorizo is browned, about 5-7 minutes.

3.Add the finely chopped onion to the skillet and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

4.Add the sliced mushrooms to the skillet and cook until they are tender and have released their moisture, about 5 minutes.

5.Sprinkle in the smoked paprika and red pepper flakes (if using), stirring to combine. Pour in the chicken or vegetable broth and bring to a simmer, allowing the flavors to meld for about 3 minutes.

6.Add the cooked pasta to the skillet, tossing to combine with the chorizo, bacon, and mushroom mixture. If the pasta seems dry, add a little reserved pasta water until you reach your desired consistency.

7.Season with salt and pepper to taste. Remove from heat and stir in the grated Parmesan cheese until melted and creamy.

8.Serve hot, garnished with fresh chopped parsley and additional Parmesan cheese if desired.
