Pork Posole

1.Heat oil in a large pot over medium-high. Brown pork in two batches on all sides; transfer to a plate.

2.Reduce heat to medium, add onions to pot, and sweat, covered, until softened, 5 minutes.

3.Stir in garlic, cumin, oregano, coriander, and bay leaf; cook 1 minute.

4.Stir in broth, tomato sauce, diced tomatoes, chipotle, adobo sauce, and pork; bring to a boil.

5.Cover pot, reduce heat to low, and simmer until pork is tender, about 2 hours.

6.Add hominy, cilantro, and lime juice; season with salt and pepper.

7.Garnish posole with radishes and avocado.
