Savory Tomato and Carrot Soup

1.Heat the olive oil in a large pot over medium heat.

2.Add the diced onion to the pot and sauté until translucent, about 5 minutes.

3.Stir in the chopped tomatoes and cook for another 5 minutes until they start to soften.

4.Add the sliced carrots and vegetable broth to the pot, bringing the mixture to a boil.

5.Once boiling, reduce the heat to a simmer and add the dried basil, dried oregano, salt, and pepper.

6.Cover the pot and let the soup simmer for about 20 minutes, or until the carrots are tender.

7.Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup in batches to a blender.

8.Stir in the lemon juice and adjust seasoning if necessary.

9.Serve hot, garnished with fresh basil leaves.
