Decadent Cocoa Oatmeal Cookies

1.Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2.In a large mixing bowl, cream together the softened margarine and brown sugar until light and fluffy.

3.Add the egg and vanilla extract to the creamed mixture, and mix until well combined.

4.In a separate bowl, combine the rolled oats, cocoa powder, baking soda, baking powder, and salt. Stir until evenly mixed.

5.Gradually add the dry ingredients to the wet mixture, alternating with the oat milk and coconut condensed milk. Mix until a thick dough forms.

6.Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

7.Bake in the preheated oven for 10-12 minutes, or until the edges are set and the tops look slightly cracked.

8.Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
