Grand Finale Yogurt Parfaits

1.In a small saucepan over medium heat, combine the mixed berries and honey (or maple syrup). Cook for about 5-7 minutes, stirring occasionally, until the berries break down and form a compote. Remove from heat and let cool for a few minutes.

2.In a mixing bowl, stir the Greek yogurt with vanilla extract (if using) until smooth and well combined.

3.Prepare clear cups or glasses for layering the parfaits. Start by adding a layer of yogurt at the bottom of each cup, about 1/3 of the way full.

4.Next, add a layer of the berry compote on top of the yogurt, followed by a layer of granola. Repeat the layers until the cups are filled, finishing with a layer of berry compote and a sprinkle of granola on top.

5.Garnish each parfait with fresh mint leaves for a pop of color and added freshness.

6.Serve immediately or refrigerate for up to 1 hour before serving to allow the flavors to meld.
