Classic Tomato Onion Soup

1.Heat olive oil in a large pot over medium heat.

2.Add the sliced onions and a pinch of salt, cook slowly, stirring occasionally, until the onions are deeply caramelized and golden brown, about 25-30 minutes. If using, add butter halfway through to enhance richness.

3.Add the minced garlic and cook for 1 minute until fragrant, being careful not to burn it.

4.Stir in the tomato paste and cook for 2 minutes to deepen the flavor.

5.Add the chopped tomatoes, sugar, dried thyme, salt, and pepper. Cook for about 10 minutes, stirring occasionally, until the tomatoes break down and the mixture thickens slightly.

6.Pour in the vegetable broth and bring the soup to a gentle simmer. Let it cook for another 15 minutes to meld flavors.

7.Remove the soup from heat and use an immersion blender to puree until smooth. Alternatively, carefully transfer the soup in batches to a blender and puree until smooth.

8.Taste and adjust seasoning with additional salt and pepper if needed.

9.Serve hot, garnished with fresh basil leaves.
