Friendly's Veggie Delight Pizza

1.Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat.

2.On a lightly floured surface, roll out the pizza dough to a 12-inch round. Transfer to a parchment-lined baking sheet or pizza peel.

3.In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, honey (or maple syrup), minced garlic, grated ginger, and 2 tablespoons of water until smooth. Add more water if needed to reach a spreadable consistency.

4.Brush the pizza dough lightly with olive oil. Spread the peanut sauce evenly over the surface, leaving a 1/2-inch border for the crust.

5.Sprinkle mozzarella cheese evenly over the sauce. Top with shredded carrots, red bell pepper, and red onion.

6.Season lightly with salt and black pepper. Bake for 14-18 minutes, or until the crust is golden and cheese is bubbly.

7.Remove from the oven. Immediately sprinkle with scallions, chopped peanuts, and sesame seeds.

8.Garnish with fresh cilantro leaves. Slice and serve hot.
