Chocolate Oreo Cheesecake Bars

1.Preheat your oven to 325°F (160°C). Line a 9x9 inch (23x23 cm) square baking pan with parchment paper, leaving some overhang for easy removal.

2.In a medium bowl, combine the crushed Oreo biscuits and melted butter. Stir until the mixture resembles wet sand and holds together when pressed.

3.Press the Oreo mixture firmly and evenly into the bottom of the prepared pan to form the crust. Bake for 10 minutes, then remove from the oven and set aside to cool slightly.

4.In a heatproof bowl, combine the chopped dark chocolate compound and sweetened condensed milk. Place the bowl over a pot of simmering water (double boiler) and stir continuously until the chocolate is fully melted and the mixture is smooth.

5.Remove the bowl from heat and whisk in the granulated sugar, vanilla extract, and salt until well incorporated.

6.Pour the chocolate filling over the baked Oreo crust, spreading it evenly with a spatula.

7.Place the pan back into the oven and bake for 30-35 minutes, or until the edges are set but the center still slightly jiggles when shaken gently.

8.Remove from the oven and allow the bars to cool completely at room temperature. Then, refrigerate for at least 3 hours or until fully chilled and firm.

9.Once chilled, melt additional dark chocolate compound in a double boiler until smooth and glossy.

10.Pour the melted chocolate over the chilled cheesecake layer, spreading evenly to create a shiny topping.

11.Refrigerate the bars for another 30 minutes to set the chocolate topping.

12.Use the parchment paper overhang to lift the bars out of the pan. Cut into 12 squares using a sharp knife, wiping the blade clean between cuts for neat edges.

13.Serve chilled and enjoy the harmonious layers of crunchy Oreo base, creamy chocolate filling, and glossy dark chocolate topping.
