Chilli con Queso

Chilli con queso is the ultimate tex-mex cheese-lovers' dip. Serve it warm, like you would a cheese fondue, with extra toppings, if you like, and colourful corn chips for dipping.
EXTRA TOPPINGS - If you like, pulse 1 chopped dried chorizo sausage in a food processor until finely chopped. Stir in a small frying pan over medium heat until fat is rendered and chorizo is crisp. Serve the dip topped with chorizo and crumbled goat’s cheese.
TIP - You can substitute Tabasco Chipotle Sauce for the chipotle chillies in adobo sauce.
