PB & J French Toast with Berry Brown Butter Sauce

1.Melt 2 tbsp butter until foamy, about 4-5 minutes. Stir in jam and 2 pinches of salt. Simmer for 4 minutes. Cover to keep warm.

2.Spread 2 1/2 tbsp peanut butter on 2 slices of bread (5 tbsp total). Arrange banana slices on each slice. Spread the rest of the peanut butter on the remaining slices. Press them together to form sandwiches.

3.In a pie plate, whisk eggs, milk, vanilla, 1 tsp salt, and 2 pinches of sugar. Dip each sandwich for 30 seconds on each side.

4.Heat more butter until foamy. Sprinkle sandwiches with 1 tsp sugar each. Cook the sugar side down for 3 minutes. Sprinkle the uncovered side with sugar.

5.Flip the sandwiches after reheating the pan and adding more butter. Cook for another 3 minutes.

6.Plate the sandwiches and sprinkle with confectioners' sugar. Serve with sauce and butter.
