Decadent Almond and Prune Cake

1.Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper.

2.In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.

3.Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.

4.In a separate bowl, combine the almond flour, baking powder, baking soda, salt, ground cinnamon, and nutmeg. Mix well to combine.

5.Gradually add the dry ingredients to the wet mixture, stirring until just combined.

6.Fold in the chopped prunes and walnuts (if using) until evenly distributed throughout the batter.

7.Pour the batter into the prepared cake pan and smooth the top with a spatula.

8.Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

9.Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
