Homemade Creamy Ricotta Cheese

1.In a large saucepan, pour the whole milk and heat it over medium heat until it reaches a gentle simmer, stirring occasionally to prevent it from scorching.

2.Once the milk is simmering, add the lemon juice or white vinegar and salt. Stir gently for a few seconds to combine, then remove the saucepan from the heat.

3.Let the mixture sit undisturbed for about 10 minutes. During this time, the curds will begin to form and separate from the whey.

4.Line a fine-mesh strainer with cheesecloth or a clean kitchen towel and place it over a large bowl to catch the whey.

5.Carefully pour the curdled milk mixture into the lined strainer. Allow it to drain for about 15-20 minutes for a creamier texture, or longer if you prefer a firmer ricotta.

6.If desired, transfer the drained ricotta to a mixing bowl and add the butter. Stir gently until the butter is melted and fully incorporated, creating a richer, creamier texture.

7.Taste the ricotta and adjust the salt if necessary. You can also add herbs or spices at this stage for additional flavor.

8.Transfer the ricotta to an airtight container and refrigerate for at least 2 hours before using to allow the flavors to meld.
