Classic Beef Wellington: A Culinary Masterpiece

1.Preheat your oven to 400°F (200°C).

2.Season the beef fillet generously with salt and pepper. Heat a skillet over high heat and sear the beef on all sides for about 2-3 minutes until browned. Remove from heat and let it cool.

3.In the same skillet, add the finely chopped mushrooms and cook over medium heat until all the moisture has evaporated, about 10-15 minutes. Stir in the fresh thyme leaves and season with salt and pepper. Remove from heat and let it cool completely.

4.Once the mushrooms are cool, lay out the prosciutto slices on a sheet of plastic wrap, slightly overlapping them to create a rectangle. Spread the cooled mushroom mixture evenly over the prosciutto, then spread the pâté on top of the mushrooms.

5.Place the cooled beef fillet in the center of the mushroom and prosciutto layer. Using the plastic wrap, roll the prosciutto and mushrooms around the beef tightly, ensuring it is well wrapped. Twist the ends of the plastic wrap to secure it and refrigerate for 15-20 minutes to set.

6.Roll out the puff pastry on a floured surface to a size large enough to completely encase the beef fillet. Remove the beef from the plastic wrap and place it in the center of the pastry.

7.Brush the edges of the pastry with the beaten egg. Fold the pastry over the beef, sealing it tightly. Trim any excess pastry and ensure there are no gaps. Brush the entire pastry with the remaining beaten egg.

8.Place the wrapped beef seam-side down on a baking sheet lined with parchment paper. Use a sharp knife to score a decorative pattern on top of the pastry without cutting through it.

9.Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the internal temperature of the beef reaches 125°F (52°C) for medium-rare.

10.Remove from the oven and let it rest for 10 minutes before slicing. Serve with your choice of sides and enjoy your culinary masterpiece.
