Stovetop Strawberry Turnovers with Phyllo Dough

1.In a medium bowl, combine chopped strawberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Stir gently until well mixed and set aside to macerate for 10 minutes.

2.Lay one sheet of phyllo dough on a clean, dry surface and brush lightly with melted coconut oil. Place a second sheet on top and brush again. Repeat until you have a stack of 4 sheets.

3.Cut the stacked phyllo sheets into 4 equal rectangles.

4.Place about 2 tablespoons of the strawberry filling on one half of each rectangle, leaving a small border around the edges.

5.Fold the phyllo over the filling to form a triangle and press the edges firmly to seal. You can gently crimp the edges with a fork to ensure they stay closed.

6.Heat a non-stick skillet over medium heat and lightly grease with coconut oil or non-stick spray.

7.Place the turnovers in the skillet and cook for 3-4 minutes on each side, or until the phyllo is golden brown and crisp. Adjust heat as needed to prevent burning.

8.Remove turnovers from the skillet and let cool slightly on a wire rack.

9.Optional: Dust turnovers lightly with powdered sugar before serving.
