Strawberry-Lime Gin Smash

1.First, prepare the lime syrup: In a small saucepan, combine granulated sugar, water, and lime zest. Heat over medium heat, stirring until the sugar is fully dissolved. Remove from heat and let it cool completely. Once cool, stir in the fresh lime juice. Strain the syrup through a fine-mesh sieve to remove the zest and set aside.

2.In a sturdy cocktail shaker, add the hulled and quartered fresh strawberries. Muddle the strawberries gently but thoroughly to release their juices and break them down.

3.Add the gin, prepared lime syrup, and fresh lime juice to the shaker with the muddled strawberries.

4.Fill the shaker with ice cubes and secure the lid. Shake vigorously for about 15-20 seconds until well-chilled.

5.Fill a highball glass or a rocks glass with crushed ice.

6.Double strain the cocktail mixture from the shaker into the prepared glass filled with crushed ice. Double straining ensures a smooth drink free of strawberry pulp and seeds.

7.Top the drink with soda water or sparkling water to your desired level of fizziness.

8.Garnish with a fresh mint sprig and a lime wheel or wedge. Serve immediately and enjoy.
