Luscious Lentil Soup

Preparation Rinse the dried lentils under cold water and drain. Chop the onion, garlic, carrot, and celery. Gather the spices, vegetable broth, water, and other ingredients.

Cooking 1. In a large pot, heat some olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Saute until the vegetables are softened. 2. Stir in the drained lentils, vegetable broth, water, bay leaf, and spices. Bring the soup to a boil, then reduce the heat and simmer for 25-30 minutes, or until the lentils are tender. 3. If using, add the optional diced tomatoes and spinach to the soup. Simmer for an additional 5-10 minutes. 4. Season the soup with salt and pepper to taste.

3.Serve the luscious lentil soup hot, garnished with a drizzle of extra virgin olive oil, a sprinkle of fresh parsley, and a wedge of lemon. Enjoy with crusty bread or a side salad for a satisfying meal.
