Spicy Tomato and Potato Curry

Preparing the Ingredients Peel and cube the potatoes, chop the tomatoes, and finely chop the onion. Slice the green chilies and set aside. Also, cook the chickpeas if not already cooked.

Cooking the Curry Heat the vegetable oil in a large, deep skillet over medium heat. Add the chopped onions and sauté until golden brown. Then, add the chopped tomatoes, green chilies, and curry leaves. Cook for 5-7 minutes until the tomatoes soften and release their juices.

3.Add the cubed potatoes and cooked chickpeas to the skillet. Stir gently to combine all the ingredients.

4.In a small bowl, mix the turmeric powder, chili powder, garam masala, and salt with 2 cups of water. Pour this spice mixture over the potato and tomato mixture in the skillet. Stir gently to combine.

5.Cover the skillet and let the curry simmer over low heat for 20-25 minutes, or until the potatoes are tender and the sauce has thickened to your desired consistency.

Final Touch Once the curry is cooked, taste and adjust the seasoning if needed. Garnish the curry with fresh cilantro leaves before serving.
