Maple Fudge Chex Mix

Preparation Preheat the oven to 250°F (120°C). Line a large baking sheet with parchment paper or a silicone baking mat.

Chex Mix In a large mixing bowl, combine the Rice Chex cereal (3 cups), Corn Chex cereal (2 cups), Wheat Chex cereal (2 cups), pretzels (1 cup), mixed nuts (1 cup), and dried cranberries (1 cup). Toss gently to mix well.

Maple Fudge Coating In a small saucepan, melt the unsalted butter (½ cup) over medium heat. Stir in the pure maple syrup (½ cup), brown sugar (¼ cup), heavy cream (¼ cup), vanilla extract (1 teaspoon), and salt (½ teaspoon). Cook the mixture, stirring constantly, until it starts to boil. Reduce the heat to low and continue to cook for an additional 2 minutes, stirring continuously.

Coating the Chex Mix Remove the saucepan from the heat and quickly stir in the baking soda (¼ teaspoon). The mixture will foam up. Pour the hot maple fudge coating over the Chex mix in the mixing bowl.

Mixing Using a rubber spatula or wooden spoon, gently toss the Chex mix with the maple fudge coating until all the ingredients are evenly coated.

Baking Transfer the coated Chex mix onto the prepared baking sheet and spread it out in an even layer.

Baking Bake in the preheated oven for 1 hour, stirring every 15 minutes to ensure even baking and prevent sticking.

Cooling After baking, remove the baking sheet from the oven and allow the Maple Fudge Chex Mix to cool completely. The mixture will become crunchy as it cools.

Storage Once cooled, transfer the Maple Fudge Chex Mix to an airtight container or resealable bags for storage. Enjoy as a delicious snack!
